100 & Counting!

Hi Friends!

I’m back after a 3 day blogging lapse – Lol!  I’ve been crocheting quite a bit and will highlight a couple of projects later in the week.

But I’m back and today, yes, this very day, is my 100th blog post!  Woohoo!  🙂  I just want to say that it has been so much fun to connect with so many of you wonderful people from around the world!  Thanks for reading and for stopping by!

Since I haven’t posted any Alaska photos lately, I decided to add a few more from my summer day trip that I first blogged about HERE.  This was part of a train and boat adventure that our children’s ministry team from church went on and it was filled with breathtaking scenery, yummy food and great fellowship!  So, without further ado, here they are:

6jAnd until next time I will leave you with my favorite verse:

“May the God of hope fill you with all joy and peace as you trust in Him, so that you may overflow with hope by the power of the Holy Spirit.” {Romans 15:13}

Collages & Congratulations!

Hi Friends,

Finally checking back in after an awesome weekend!  Our son had his big race yesterday in Seward and, as mentioned in my previous post, we went down to cheer him on.  He gave the race every last ounce he had and he came in 6th place in regions!  Woohoooooo!  He was overjoyed and so thankful and we were bursting at the seams with pride.  Now we are looking ahead to next Saturday and the State XC meet.  Here’s hoping for another great race!

We also squeezed in some sightseeing fun, family game night and yummy food, among other things, so it was an all around great getaway!

I will let the photos tell the rest of the story.

Did you have any weekend adventures?  If so, I’d love to hear.

Blessings with joy,

Yes. That is a bear paw print. Oh my.

And here are a couple of postcards from the road…

A Big Day & A Quick, Yummy Recipe

Hi Friends,

Today is a big day!  Dear son is running in the regions xc race in Seward and we are heading out in a few minutes to make the drive over to cheer him and the team on.  He is hoping for a top 10 finish.  I know he can do it!  I’ll check in tomorrow (or maybe later today) and let you know.  🙂

Not sure if I will be able to blog much this weekend so I am leaving you with a yummy  and easy breakfast (that we sometimes have for dinner) recipe my family enjoys.

Do you have a breakfast recipe you’ve blogged about or can share?  If so, do tell.  And thanks!

Here’s mine:

Shhhhh…We don’t call this “quiche” around my hubby. Around him we call it an “egg dish”. He doesn’t like quiche, you see, but he loves this. :O)

1 C milk
1/2 C Bisquick
4 eggs
2 or 3 green onions, sliced
1 or 2 celery stalks, sliced
1/4 tsp salt
1/8 tsp pepper
1 C meat (bacon, sausage, ham) cubed or crumbled
1 C grated cheese (use your favorite)

  • Mix first 5 ingredients well
  • Stir in the rest of the ingredients
  • Right before placing in the oven – top with a sprinkling of grated cheese
  • Pour ingredients into a greased (I use Pam spray) pie plate or pie stone. Bake in oven at 400* for 30 to 35 minutes or until toothpick test comes out clean.

Web photo – will replace with one of mine soon.

A Very Nice View

Hi Friends,

If you’ve been visiting my blog long you know that I love Seward, Alaska.  It’s beauty is stunning and it is an easy drive from our home, making it the perfect weekend get-away.

Well, what I haven’t mentioned yet {at least not this year – lol} is that it also boasts one of my favorite restaurants:  Ray’s on the Waterfront.  My lunch of choice {dinner is a bit spendy} is their Alaskan cod & chips {you can choose halibut too or a combo}.  I usually substitute the house salad for the slaw and keep the fries. 🙂  SO YUMMY!   But what makes it even more special is the amazing view!  And this photo doesn’t do it justice! There are windows from one end of the restaurant to the other that all look out upon the harbor and the mountains beyond. Breathtaking.

So, if you are ever in Southcentral Alaska between May 15th &
September 15th, you definitely need to visit Seward and I would highly recommend Ray’s fish and chips!

Two More Collages

Hi Friends!

My hubby and I are home now after a lovely and quick overnight trip.  Here are two more collages of our views while we were out and about.  I did some yarn shopping and crocheting as well so I promise to write a crochet post next for all my hooky friends. 🙂

One Day Trip of a Lifetime! Part 1

Hi Friends!

What an amazing time we had on Friday.  The “we” was our children’s ministry team at church and we 7 went on a train trip to Seward and a day cruise from Seward to Fox Island and back.  It was the trip of a lifetime all in one day!  We got to the depot at 5:45 AM and arrived back at the depot at 10:30 PM.  It started out rainy, but the weather just kept improving and everywhere we went was breathtakingly beautiful.

We have a busy day today so I am going to start with a few pictures now and then highlight a few more this week.

I hope you will get to take this same trip or something like it someday.  You never know! 🙂

Blessings with joy,

The Scenic Route

Hi Friends,

It seems to me that every road in South Central Alaska is the scenic route.  I have lived here for 30 years and I still cannot stop taking pictures every time I go on a road trip.  Here are just a few I took the last time we headed home from Seward.

Alaska still takes my breath away!

An Amazing Day & A Favorite View

Hello friends, Today was pretty amazing.  I attended the live simulcast of the Global Leadership Summit at our satellite location.  It is going on tomorrow as well.  The speakers today were powerful!  Click HERE to jump over to the highlights.  General Colin Powell was just one of the awesome speakers! One of the mottos of the summit is: Everyone wins when a leader gets better. So true!

And because I love to share photos on my posts here is a photo that I have always loved {and yes, it is totally unrelated to the first part of my post and I’m okay with that}. 🙂 I’ve always loved the bond between these two.

Mother – Son Weekend Trip Part 2

Hi Friends,

I hope you’ve had a great weekend!  Here are a few more pictures to finish up blogging about our trip last weekend.  It was so nice getting away with my son.  He will be a senior this year and I definitely cherish the special times I get with him.   Enjoy the beauty of Seward, Alaska!

Mother – Son Weekend Trip Part 1; Seward, Alaska

Last Friday evening after work my son and I packed up the car and headed to Seward for the weekend. Hubby and daughter had other plans so it was just the two of us, mother and son. We had a great time sightseeing, walking our little miniature schnauzer, Molly, eating out, playing games, reading, sleeping in, yarn shopping {me}, and visiting the Alaska Sealife Center. Seward is one of my favorite places in Alaska. On a beautiful day there is little that compares to it’s beauty. Here are the first batch of photos from that trip, at Lowell Point in the evening. I’ll post a few more this weekend when I’m back on my main computer. Blessings! -Jackie
